Mummy apple hand pies - easy Halloween treats

Ingredients

  • 1/4 cup sugar 50g
  • 1.5 teaspoons cinnamon
  • 2 small apples preferably sweet and soft variety like Gala
  • 1 sheet puff pastry 300g
  • candy eyes

Instructions

  • Preheat the oven to 375°F / 190°C, Gas Mark 5, no fan.
  • Peel and core the apples, then slice them. Make cinnamon sugar: mix the sugar with cinnamon.
  • Sprinkle the puff pastry with flour on both sides (so it won't stick) then place on a piece of parchment paper. Cut the puff pastry sheet into 6 rectangles. Sprinkle half of the cinnamon sugar in the middle of the squares then place the apple slices on top.
  • Cut the dough into strips on both sides of the apples.
  • Wrap the dough strips around the apples. Try to do that not so neatly as these pastries should look like mummies!
  • Sprinkle the pastries with the rest of the cinnamon sugar (you could brush the pastries with the egg wash first if you wish, but it's not necessary).
  • Bake the pastries for 30 minutes.
  • Now place the candy eyes on top. You can 'glue' them with some melted white chocolate or sugar glaze (made with icing sugar and water).
  • Enjoy!

Notes

  • Puff pastry should be thawed, preferably overnight in the fridge. For the best flavor use all-butter puff pastry.
  • How to make candy eyes with white chocolate: melt a couple of squares of white chocolate using a double-broiler method (pour boiling water into a small pot, then place a bowl over the top, add the chocolate to the bowl and stir until melted). Using a teaspoon, apple small rounds of melted chocolate onto a small piece of parchment paper, that should look like eyes. Apply either black mustard seeds or poppy seeds in the middle. Put in the fridge for the chocolate to set. Make sure that your pastries are completely cold before putting the chocolate eyes on top, otherwise the chocolate will melt.
  • Storage: These pastries taste best for up to 2-3 hours after baking them (are super crispy), then they will start to turn soft. In terms of flavors, they will keep for up to 2-3 days. Store them in a tightly closed container.
  • Calories = 1 hand pie (1/6 of the recipe). This is only an estimate!
