Preheat the oven to 375°F / 190°C, Gas Mark 5, no fan.
Peel and core the apples, then slice them. Make cinnamon sugar: mix the sugar with cinnamon.
Sprinkle the puff pastry with flour on both sides (so it won't stick) then place on a piece of parchment paper. Cut the puff pastry sheet into 6 rectangles. Sprinkle half of the cinnamon sugar in the middle of the squares then place the apple slices on top.
Cut the dough into strips on both sides of the apples.
Wrap the dough strips around the apples. Try to do that not so neatly as these pastries should look like mummies!
Sprinkle the pastries with the rest of the cinnamon sugar (you could brush the pastries with the egg wash first if you wish, but it's not necessary).
Bake the pastries for 30 minutes.
Now place the candy eyes on top. You can 'glue' them with some melted white chocolate or sugar glaze (made with icing sugar and water).
