Avocado Cilantro Lime Dressing

Ingredients

  • 1 avocado
  • 2 handfuls cilantro 40g
  • 6 tablespoons lime juice*
  • 1/2 cup yogurt 120ml
  • 1/2 cup water 120ml
  • 1/4 cup olive oil 60ml
  • 2 cloves garlic
  • salt and pepper to taste

Instructions

  • Cut the avocado in half lengthwise, twist the two halves apart, remove the pit, and scoop out the flesh with a spoon. Discard the skin and the pit.
  • Peel the garlic, wash the cilantro leaves and stems (we're using both), measure out all the other ingredients: olive oil, water, yogurt, and lime juice*.
  • Add all the ingredients into a food processor.
  • Blend until thick and smooth. Adjust the consistency of the dressing by adding more water to thin it out (if necessary). Season with salt and pepper to taste.

Notes

  • *Please note that the dressing should be a little bit on the sour side. It will be a little bit sour on its own but when served with other dishes, like grilled/pan-fried chicken, it will be just perfect. You may be even tempted to add some sweetener to it (like honey) but I don't recommend that, I've tried it and didn't like it. You can always start with 1/4 cup of lime juice and then add more if you like it.
  • Storage: You can store the dressing in the fridge for up to 3 days. Cover its surface with plastic foil to prevent browning.
