Preheat the oven to 350°F (180°C).
Add all the wet ingredients into a large bowl (eggs, coconut oil, maple syrup, honey, vanilla, apple sauce, yogurt).
In another bowl, whisk together all the dry ingredients (flour, baking powder and soda, salt, cinnamon).
Add the dry ingredients into the wet ingredients. Whisk until almost combined.
Peel and core the apples. Cut them into very small cubes. Add the apples to the muffin batter. Stir gently with a spatula until evenly distributed. Don't overmix the batter.
Line a muffin pan with 12 muffin liners.
Divide the batter evenly between the liners.
Bake for 23 minutes or until a cake tester or a wooden skewer inserted into the center of the muffin comes out clean.
Let cool for 5 minutes on a cooling rack then enjoy!
