Santa Strawberries

Ingredients

  • 14 large fresh strawberries about 9 ounces or 250g
  • 1/3 cup cream cheese
  • 1 1/2 tablespoons powdered sugar
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
  • small round sprinkles - brown and red for the eyes and nose, or coloring gel, or mini chocolate chips
  • shredded coconut for the beard

Instructions

  • Wash the strawberries and pat dry. Cut off the leafy ends (cut them off evenly so the strawberries can stand up straight). Cut off a small part of the pointy end of each strawberry - it will be used as Santa's head. Set aside.
  • To a medium bowl add cream cheese, powdered sugar, heavy cream, and vanilla extract. Beat with a mixer for 2-3 minutes or until well-combined and fluffy.
  • Transfer the cream cheese mixture to a small thick plastic bag with a corner cut off and fitted with a small star piping tip.
  • Place the strawberries (bigger parts) on a flat plate. Pipe the filling onto strawberries.
  • Top with the pointy part of the strawberry ('hats').
  • Pipe some more cream at the front to resemble Santa's beard.
  • Pipe a small amout of the cream on top of each strawberry to resemble a pom pom.
  • Add the chocolate eyes and mouth - I used tweezers to do that and used chocolate round sprinkles for the eyes and red for the nose.
  • Take each strawberry in hand and sprinkle the beard with shredded coconut.
  • Now they're done, enjoy!

Notes

  • Santa strawberries are best freshly served or the strawberries will be mushy. You can refrigerate them for 1-2 hours max.
  • Calories = 1 Santa strawberry (1/14 of the recipe). This is only an estimate!
