Cut mushrooms and olives into slices and bell pepper into strips.
Heat 1 tablespoon of oil in a large frying pan over medium-high heat. When hot, add the mushrooms and bell pepper. Don't stir for the first 1-2 minutes, letting them brown, then cook, stirring, for a couple of minutes until they are browned, softened, but still crunchy. Season with salt, pepper, basil, and garlic powder. Transfer to a plate.
Spread 2 tablespoons of pizza sauce on each tortilla.
Sprinkle 1/4 cup of mozzarella on half of the tortilla, top with pepperoni/salami, 1/4 of the bell pepper and mushrooms, and a couple of olive slices. Sprinkle with 1 tablespoon of parmesan, then with another 1/4 cup of mozzarella. Fold the tortilla in half.
Heat the remaining tablespoon of oil over medium/medium-low heat.
Place the assembled tortilla in the pan and cook on both sides until golden.
Transfer to a plate and sprinkle with salt.
