Pizza Quesadilla

Pizza quesadilla is a simple and delicious quesadilla made with all the toppings of your favorite pizza. To a classic combo, or pizza sauce, mozzarella, and pepperoni, I added sauteed mushrooms, bell pepper, and black olives but feel free to add your favorite toppings. This easy recipe takes 20-minutes to make and it’s super kid-friendly!

How to make it

Here’s what you need to make these delicious quesadillas:

  • tortilla – wheat or corn
  • pizza sauce – I used store-bought
  • low-moisture shredded mozzarella – I would recommend buying a block of cheese and grate it yourself, I used pre-shredded cheese here and you could really taste all the starch that is added to the cheese to prevent it from clumping
  • parmesan cheese – for a boost of cheesy flavor since mozzarella has a rather neutral flavor
  • pepperoni/salami/ham – or omit it to keep it vegetarian.

Now add your favorite toppings – I added mushrooms, bell pepper, and olives because this is what I like on pizza!

STEP 1: Cut mushrooms and olives into slices and bell pepper into strips.

Heat 1 tablespoon of oil in a large frying pan over medium-high heat. When hot, add the mushrooms and bell pepper. Don’t stir for the first 1-2 minutes, letting them brown, then cook, stirring, for a couple of minutes until they are browned, softened, but still crunchy. Season with salt, pepper, basil, and garlic powder. Transfer to a plate.

STEP 2: Spread 2 tablespoons of pizza sauce on each tortilla.

Sprinkle 1/4 cup of mozzarella on half of the tortilla, top with pepperoni/salami, 1/4 of the bell pepper and mushrooms, and a couple of olive slices.

STEP 3: Sprinkle with 1 tablespoon of parmesan, then with another 1/4 cup of mozzarella. Fold the tortilla in half.

STEP 4: Heat the remaining tablespoon of oil over medium/medium-low heat.

Place the assembled tortilla in the pan and cook on both sides until golden.

Transfer to a plate and sprinkle with salt.

Enjoy!

Baked quesadilla

Alternatively, you can cook the quesadillas in the oven. It’s a great option if you have lots of quesadillas to cook. In terms of taste, they taste the same and are both crispy.

How to do it: place the quesadillas on a baking sheet lined with parchment paper, brush with melted butter, and bake at 400°F (200°C) for about 5-10 minutes or until browned and crispy.

Storage

These quesadillas can be easily reheated in a pan. They will still taste amazing but the tortillas won’t be crunchy anymore.

The best way to store these is to store the filling separate from tortillas and assemble them just before cooking. This way your quesadillas will be crispy.

Quesadillas can also be frozen. Wrap them in plastic foil and freeze them for up to 3 months. Thaw in a pan or in the oven.

How to serve it

This quesadilla is pretty good on its own, but you could serve it with more pizza sauce for dipping or top it with garlic dip or ranch dressing. You could also serve it with marinara sauce for dipping.

Notes

  • Mushrooms, bell pepper, and olives are optional. Add your favorite pizza toppings to your quesadilla.
  • Try not to add more pizza sauce to quesadillas or they will be soggy. If you want your quesadillas more saucy, serve more pizza sauce on the side to dip your quesadillas.
  • Calories = 1 quesadilla (1/4 of the recipe). This is only an estimate!
