Apple Baked Oatmeal

Ingredients

  • 2 cups (200g) old-fashioned oats
  • 1 cup (240g) milk
  • 2 large eggs
  • 1/4 cup (60g) plain yogurt
  • 1/4 cup (60g) melted butter
  • 2 teaspoons vanilla extract
  • 1/4 cup (80g or 60ml) maple syrup
  • 1 1/2 teaspoons cinnamon
  • pinch of salt
  • 1 teaspoon baking powder
  • 1/3 cup (45g) raisins
  • 1 pound (450g) apples 3 medium apples
  • 1/4 cup (25g) chopped walnuts
  • 2 cubes white chocolate optional

Instructions

  • Preheat the oven to 375°F (190°C).
  • Add oats, milk, eggs, yogurt, butter, vanilla, maple syrup, cinnamon, salt, baking powder, and raisins (all the ingredients except walnuts, apples, and chocolate) to a large bowl. Whisk until well combined.

  • Peel the apples (optional) and cut into cubes. Add to the oatmeal mixture and stir until combined.

  • Grease a small baking dish with butter (I used a 9-inch/23 cm deep dish pie plate), pour the oatmeal mixture into the baking dish.
  • Sprinkle with the walnuts and chopped chocolate (if using), press them slightly into the oatmeal.

  • Bake for 40 minutes or until set in the center. If the oatmeal is browning too much in the last 5 minutes, cover it loosely with aluminum foil (it's important that the top of the oatmeal gets nicely golden brown - it will improve flavor and make the top crunchy - you'll love these crispy bits of oats and apples).
