Apple Baked Oatmeal

Baked apple cinnamon oatmeal is a delicious and wholesome breakfast option. It combines tender baked apples and hearty oats for a comforting and nutritious start to the day. The apples and oats are complemented with crunchy walnuts, sweet raisins, and cinnamon. The oatmeal is creamy on the inside and amazingly crunchy at the top! It reheats perfectly and makes a great make-ahead breakfast.

What is baked oatmeal?

Baked oatmeal, in comparison to stovetop oatmeal, contains eggs and baking powder, and is as the name suggests, baked in the oven. This results in soft, creamy oatmeal that tastes almost like a cake.

Baking it also makes it easier to reheat and freeze.

Ingredients

Below you will find information about the ingredients and how to prepare the recipe. For the measurements and detailed instructions scroll down to the printable recipe card.

Here’s what you need to make this delicious oatmeal:

  • Milk – I used regular milk, but you can also use plant-based milk (make sure it’s unsweetened).
  • Yogurt – makes the oatmeal thicker and creamy.
  • Eggs and baking powder – this is what makes this oatmeal different from regular stovetop oatmeal – they make the oatmeal moist, custardy, and cake-like.
  • Oats – use rolled, old-fashioned oats not instant or quick oats (for the best texture of the oatmeal).
  • Raisins – you can omit them, but I love them in this oatmeal. Instead of raisins, you could use cranberries.
  • Walnuts – you can omit walnuts or use other nuts instead, such as pecans, hazelnuts, or almonds.
  • Instead of butter, you can use melted coconut oil.
  • Maple syrup – is added for sweetness and flavor. You can use honey or xylitol instead. You could also add some mashed bananas (1-3 medium bananas) to naturally sweeten your oatmeal, especially if you have some ripe ones on your counter. They always make a great addition to any oatmeal recipe.
  • Cinnamon – instead of cinnamon, you can use pumpkin pie spice or gingerbread spice mix.
  • Apples – you can use any apples you have for this recipe. I like to use sweet and soft apples such as Gala. Sour apples will also work.
  • White chocolate – totally optional, but I like this small amount of indulgence with apple oatmeal.

What you could also add:

  • chocolate chips
  • swirls of peanut butter or almond butter
  • cranberries
  • mashed bananas
  • applesauce
  • use pears instead of apples
  • shredded coconut
  • more spices such as nutmeg, ginger, or allspice

How to make it

STEP 1: Preheat the oven to 375°F (190°C).

Add oats, milk, eggs, yogurt, butter, vanilla, maple syrup, cinnamon, salt, baking powder, and raisins (all the ingredients except walnuts, apples, and chocolate) to a large bowl.

(2 cups (200g), 1 cup (240g) milk, 2 large eggs, 1/4 cup (60g) plain yogurt, 1/4 cup (60g) melted butter, 2 teaspoons vanilla extract, 1/4 cup (80g or 60ml) maple syrup, 1 1/2 teaspoons cinnamon, pinch of salt, 1 teaspoon baking powder, 1/3 cup (45g) raisins)

STEP 2: Whisk until well combined.

STEP 3: Peel the apples (optional) and cut into cubes. Add to the oatmeal mixture and stir until combined.

(1 pound (450g) apples, 3 medium apples)

STEP 4: Grease a small baking dish with butter (I used a 9-inch/23 cm deep dish pie plate), pour the oatmeal mixture into the baking dish.

Sprinkle with the walnuts and chopped chocolate (if using), press them slightly into the oatmeal.

(1/4 cup (25g) chopped walnuts, 2 cubes white chocolate, optional)

Bake for 40 minutes or until set in the center. If the oatmeal is browning too much in the last 5 minutes, cover it loosely with aluminum foil (it’s important that the top of the oatmeal gets nicely golden brown – it will improve flavor and make the top crunchy – you’ll love these crispy bits of oats and apples).

Please note you won’t be able to cut nice square servings of this oatmeal. It has a little bit of looser consistency – this is what we prefer. This oatmeal is not dry but nice and creamy!

Storage

How to store the oatmeal: Store the oatmeal in the fridge covered with plastic foil.

How long can you keep baked oatmeal? It will keep in the fridge for up to 4 days.

How to reheat: This oatmeal makes a great make-ahead breakfast. Place the baking dish in a cold oven and set it to 375°F/190°C. Bake for about 10-15 minutes or until warm (after this time the oven should come to this temperature – if your oven warms up quicker set it to 320°F/160°C). You can also reheat it in the microwave. Reheated oatmeal tastes almost as freshly made (it’s just a little bit drier, but if you serve with maple syrup and some yogurt, you won’t notice the difference).

How to make it ahead: Preparation of this oatmeal really takes a moment (for me it’s the time while my oven is heating up), but if you’re really short on time in the morning, you can prepare this oatmeal the day before. Cover the baking dish with plastic foil and put it in the fridge. On the next day bake as described in the recipe. It tastes as freshly made.

How to freeze: you can freeze the oatmeal whole or divide it into servings. I prefer to freeze separate servings because they’re quicker to thaw and warm up. You can thaw it in the fridge overnight and warm up as described above. You can also bake it straight from the freezer in a 320°F/160°C oven. Frozen oatmeal tastes almost as freshly baked but is more crumbly and a little bit dry (again, if you serve it with maple syrup and some yogurt, you won’t notice the difference).

How to double the recipe: This baked apple oatmeal recipe yields 4-5 servings. It can be easily doubled – double the ingredients and bake it in a 9×13-inch (23x33cm) baking dish. The baking time stays the same (if the oatmeal is still runny in the center, bake it for 5 minutes longer).
