Instructions
Preheat the oven to 375°F (190°C).
Add all the ingredients for the base recipe to a food processor and mix until smooth (very small lumps of oats are fine).
If making the raspberry version, also add 1 teaspoon of lemon juice. For the blueberry version, add an additional 1/2 tablespoon of oats, lemon zest, and 1 tablespoon of lemon juice.
Divide the oatmeal batter between two ramekins.
Leave as is, or add chocolate chips for the chocolate chip version, raspberries and white chocolate chips for the white chocolate raspberry version, and blueberries for the blueberry version. Press down some of the add-ins so they are evenly distributed in the batter.
Bake for 30 minutes or until baked through.
Set aside to cool for about 5 minutes (they are very hot).
Enjoy!
