coconut syrup:
½cupshredded unsweetened coconut
1cupwater
2tablespoonslight brown sugar
Instructions
Make the coconut syrup: add all the ingredients to a small pot, cook over medium-low heat for about 10 min, until reduced by about half. Strain through a sieve (I had about 5 Tbsp / 75 ml syrup left). The shredded coconut will no longer be needed.
Juice the passion fruit: cut the passion fruit in half. Using a spoon, scoop the pulp out into a mesh strainer, use the back of a wooden spoon to press the pulp through a strainer, leaving the seeds behind. To make straining easier you can blend the seeds with the pulp in a food processor or in a blender and then strain through a sieve.
Mix all the ingredients for pina colada lassi with coconut syrup and spices together.
Serve chilled and enjoy!
Notes
- Shredded coconut from coconut syrup can be used for decoration - you can sprinkle it on top of the drink.- Another idea is to rim the glass with it as you would do with a margarita. First, you‘ll need to wet the lip of the glass with water, holding it upside down, and then coat the entire rim of the glass with shredded coconut.- The drink will also be delicious without the yogurt.- Spices are optional - rose water, cardamom, cinnamon, and vanilla extract can be omitted, you can not taste them clearly in the drink, but they make its taste more interesting and complex.
