Pizza Quesadilla

Ingredients

  • 4 large tortillas
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella 200g
  • about 20 slices pepperoni or salami
  • 1/4 cup grated parmesan 22g
  • 8 button mushrooms
  • 1 bell pepper
  • 8 black olives
  • 1/2 teaspoon basil
  • 1/2 teaspoon garlic powder
  • 2 tablespoons vegetable oil
  • salt and pepper to taste

Instructions

  • Cut mushrooms and olives into slices and bell pepper into strips.
  • Heat 1 tablespoon of oil in a large frying pan over medium-high heat. When hot, add the mushrooms and bell pepper. Don't stir for the first 1-2 minutes, letting them brown, then cook, stirring, for a couple of minutes until they are browned, softened, but still crunchy. Season with salt, pepper, basil, and garlic powder. Transfer to a plate.
  • Spread 2 tablespoons of pizza sauce on each tortilla.
  • Sprinkle 1/4 cup of mozzarella on half of the tortilla, top with pepperoni/salami, 1/4 of the bell pepper and mushrooms, and a couple of olive slices. Sprinkle with 1 tablespoon of parmesan, then with another 1/4 cup of mozzarella. Fold the tortilla in half.
  • Heat the remaining tablespoon of oil over medium/medium-low heat.
  • Place the assembled tortilla in the pan and cook on both sides until golden.
  • Transfer to a plate and sprinkle with salt.
  • Enjoy!

Notes

  • Mushrooms, bell pepper, and olives are optional. Add your favorite pizza toppings to your quesadilla.
  • Try not to add more pizza sauce to quesadillas or they will be soggy. If you want your quesadillas more saucy, serve more pizza sauce on the side to dip your quesadillas.
  • Calories = 1 quesadilla (1/4 of the recipe). This is only an estimate!
