BBQ Chicken Wrap

Ingredients

  • 1 lb (450g) chicken breast, you can also use rotisserie chicken
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons frying oil
  • 1/3 cup bbq sauce
  • 4 large tortillas
  • 8 slices smoked gouda
  • 8 small leaves lettuce I used baby romaine hearts
  • 1 medium tomato
  • 4 slices cooked bacon
  • 1/3 cup ranch dressing

Instructions

  • Cut the chicken breasts in half horizontally so you have 4 thinner fillets. Season the chicken with spices, salt and pepper on both sides.
  • Heat the oil in a large frying pan over medium-high heat. Cook the chicken until cooked through and browned on both sides. Transfer to a chopping board and cut into slices. Place it back in the pan and toss with bbq sauce.
  • Assemble the wraps: place 1-2 slices of cheese on each tortilla, top with lettuce leaves, bbq chicken, bacon, tomato slice, then drizzle over some ranch dressing. Wrap the tortilla.
  • Place the wrap in a sandwich/panini press until warm. You could also reheat it in the oven, just to melt the cheese. Repeat with the remaining ingredients.
  • Enjoy!

Notes

  • If you're using rotisserie chicken - shred the chicken, warm it up with a small amount of butter and spices, then toss it with bbq sauce.
  • You can warm up your tortilla to make it more pliable – it makes folding wraps easier.
  • If you’re struggling with folding wraps, make sure to not overfill them which makes folding them harder.
  • Calories = 1 wrap (1/4 of the recipe). This is only an estimate!
