Baked Parmesan Zucchini

This baked zucchini is cheesy, flavorful, and comes together quickly. It makes such a great side dish or just a snack – I could easily eat a whole batch of these!

Here´s what you need to make this easy recipe:

  • Zucchini
  • Olive oil – there´s is no need to use extra-virgin olive oil, you can use regular olive oil.
  • Dried basil – or your other favorite herbs, for example: Italian seasoning, oregano, or onion powder.
  • Garlic powder – I prefer to use garlic powder. You could also use fresh garlic, just make sure it´s on top of zucchini under the cheese, otherwise it can burn quickly in such a hot oven.
  • Cheese – I would really recommend using a mix of grated parmesan and pecorino in this recipe. Using just parmesan is fine but tangy delicious flavor of pecorino cheese is simply unbeatable and it adds something to this dish that makes you wonder – why is this SO good? You can also use just pecorino!
  • Pecorino is a hard aged cheese similar to parmesan but made from sheep´s milk and not cow´s milk.

How to bake zucchini step by step

STEP 1: Preheat the oven to 450°F (230°C) OR to 400°F (200°C) with a fan setting (convection). Move the rack one shelf above the center.

Wash the zucchini and dry with paper towels. Cut into thick, at least 1/2 inch (1 1/4 cm) slices.

STEP 2: Place on a baking sheet (don´t line it with parchment paper), drizzle with olive oil and season with salt and pepper. Toss to coat. Spread the slices as much as you can.

STEP 3: Sprinkle zucchini with garlic powder and basil.

STEP 4: Sprinkle zucchini slices with grated (preferably on a Microplane) parmesan and pecorino cheese.

STEP 5: Bake for 9 minutes then turn on the broiler (grill+fan setting) and bake for a further 2-3 minutes or until cheese is golden in color. Keep an eye on the zucchini so it won´t burn (easy is such a hot oven). Baking time may vary depending on the thickness of the zucchini slices and on the oven (every oven bakes differently).

Top tips

  • cut the zucchini into THICK slices – thin slices will become too soft before they get chance to brown, it may look like 1/2 inch slices are too thick but believe me – zucchini will shrink a lot in the oven
  • don´t overbake zucchini – soggy and too soft zucchini is not the goal!
  • keep an eye on it and don´t let it burn – this recipe calls for a high oven temperature – every oven bakes differently so make sure to adjust the recipe to your kitchen conditions
  • parmesan AND pecorino as a topping – you just can not beat tangy flavorful pecorino cheese!

Storage

This recipe reheat well. Store the zucchini in the fridge for up to 4 days. Reheat in a 400°F (200°C) oven or in an air fryer.

Ingredients

  • 3 small or 2 medium zucchini
  • 2 tablespoons olive oil

  • 1/2 cup parmesan and pecorino cheese grated on a Microplane, or just parmesan
