Baked chicken with apples and onions

Baked chicken with apples and onions is a delicious fall dinner. This is kind of “dump it and forget it” recipe. All you have to do it add chicken legs, quartered apples and thick-sliced onions to a baking dish. Season with salt and pepper and add some fresh herbs like rosemary or thyme, then bake for about 2 hours. This results in fall-off-the-bone meat, soft, jammy apples, and sweet caramelized onions. This is so simple yet so delicious! I was having a hard time photographing this dish since the apples and onions don’t really hold their shape, but I hope you’ll give it a try! It’s easy to make for a crowd, easy to reheat and there is almost no prep time.

BAKED CHICKEN WITH APPLES INGREDIENTS + SUBSTITUTIONS:

  • chicken legs – you can also use chicken thighs or just drumsticks (drumsticks need to be baked shorter)
  • apples – use sweet-sour or sour variety, I used Golden Delicious
  • onions – I use yellow onions
  • herbs – I used rosemary, but thyme will also work great
  • optionally – add some apple cider or water to the pan if your ingredients are more spaced in your baking dish. Mine were crowded (see the photo below) so no extra liquid was necessary. If your baking dish is bigger and your ingredients are less crowded add some apple cider or water to the baking dish (there should be about 1cm / 1/2-inch liquid in the baking dish).

HOW TO MAKE APPLE CHICKEN – STEP BY STEP:

  1. Season the chicken generously with salt and pepper. It’s important to season it on the outside and under the skin.
  2. Quarter and core the apples. Cut the onions into thick slices.
  3. Place the chicken legs, apples and onions in a big baking dish or a sheet pan. Drizzle with olive oil.
  4. Add some fresh herbs.
  5. Bake!

Ingredients

  • 6 chicken legs skin-on, bone-in
  • 3 apples I used Golden Delicious
  • 3 onions
  • 2 tablespoons olive oil
  • couple twigs rosemary or thyme
  • salt and pepper to taste
  • apple cider or water optionally, see the notes*
  • mashed potatoes to serve

Instructions

  • Preheat the oven to 375°F/190°C/Gas Mark 5, no fan (if you have a convection oven reduce the temperature by about 20°).
  • Season the chicken generously with salt and pepper. It’s important to season it on the outside and under the skin.
  • Quarter and core the apples.
  • Cut the onions into thick slices.
  • Place the chicken legs, apples and onions in a big baking dish or a sheet pan.
  • Drizzle the olive oil over the chicken.
  • Add a couple of twigs rosemary.
  • Bake for 1 hour and 30 minutes, then turn on the fan OR increase the temperature by 20° OR place the baking dish under the broiler and bake for about 5-15 minutes (depending on the setting) until the chicken is lightly browned.
  • My favorite way to serve this is with mashed potatoes.
