Butter Lettuce Salad

This butter lettuce salad with creamy dressing and crunchy radishes and cucumbers is a perfect side for any meal. Light, refreshing, and slightly sweet. The delicious 3-ingredient sour cream dressing will make you really want to eat lettuce!

Here´s what you need to make this easy recipe:

  • butter lettuce – also known as butterhead lettuce, bibb lettuce, or Boston lettuce – tastes buttery and it´s very soft
  • sour cream
  • granulated sugar
  • freshly-squeezed lemon juice
  • salt to taste
  • fresh dill
  • chives
  • radishes
  • cucumber

This salad is based on a salad my grandma used to make. She used butter lettuce from her garden and seasoned it with sugar, lemon juice, and cream. This basic version of the salad is very delicious.

To make things more interesting, I like to add to my salad fresh herbs such as dill and chives and add crunchy vegetables – cucumber and radishes, for a pop of color. You can omit those!

How to make it

Cut radishes into thin slices. Dice the cucumber, sprinkle with salt, and let stand for 10 minutes.
Wash the lettuce thoroughly, leaf by leaf, and discard damaged outer leaves.
Dry the lettuce, either in a salad spinner or by hand with a kitchen towel. It´s important that the lettuce is dry.
In a medium bowl, combine sour cream, sugar, and lemon juice.
Place the cleaned and dried lettuce in a very large bowl. Season lightly with salt.
Squeeze out excess water from the cucumber. Add cucumber, radishes, chopped dill, and chives to the lettuce.
Add the dressing, toss until evenly combined.
Enjoy!

Storage

This salad doesn´t store well – after just 2-3 hours the leaves will be already wilted from the dressing. If you want to make it ahead, you can wash and dry the lettuce (which takes the most time), and prepare the dressing. Store them separately until ready to serve.

  • 1 medium head butter lettuce 14 ounces or 400g
  • 1 cup (240ml) sour cream
  • 1 tablespoon granulated sugar
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • salt to taste
  • 1/2 English cucumber optional
  • 8 radishes optional
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped chives
