Cheesy Potato Egg Scramble

This cheesy potato egg scramble is a great way to use up leftover cooked potatoes and ham. It comes together quickly and can be served for breakfast or dinner. What’s different about this recipe is that I seasoned the eggs with Old Bay seasoning – it goes perfectly with eggs and potatoes! Serve this cheesy goodness with a dollop of sour cream and chives.

Ingredients

Here’s what you need to make this delicious dish:

  • leftover cooked potatoes – best will be waxy or all-purpose potatoes
  • eggs
  • cheese – your favorite kind – I used a mix of sharp cheddar and Gruyere because this is what I had on hand, make sure to use a flavorful cheese
  • cream – to make the scrambled eggs more creamy and delicate
  • Old Bay seasoning – it’s usually used to season chicken and seafood but it also works perfectly with eggs and potatoes! instead of this spice mix, you could also use Cajun seasoning, Fajita seasoning, or chili powder (spice mix). Another delicious recipe using Old Bay seasoning is this salmon chowder.
  • Leftover ham – you can also use fried bacon to crumble on top of the dish
  • sour cream and chives to serve with the dish, sour cream is a must! Instead of chives, you can also use thinly sliced scallions.
  • You can add any veggies that you like to this dish. Pan-fried mushrooms and bell peppers would be especially good.

Step by step instructions

Cream is being added to eggs in a bowl. Eggs with spices are being whisked in a bowl.

STEP 1+2: In a medium bowl, whisk the eggs with heavy cream and Old Bay seasoning, season with salt and pepper, set aside.

STEP 3: In a large frying pan heat the oil over medium-high heat. Add the potatoes and cook them until browned on all sides.

STEP 4: Add ham to the pan.

STEP 5+6: Next, add the egg mixture to the pan. Cook it briefly over low heat until the eggs are only partially cooked. They should not be set or they will end up too dry (we will be cooking them further with cheese). Season everything with salt and pepper.

STEP 7+8: Sprinkle shredded cheese evenly over the eggs and potatoes. Cover the pan with a lid. Cook over low heat until the cheese is melted and the eggs are cooked.

Transfer the scramble to plates and serve with sour cream and chopped chives.

You could also serve it with crumbled crispy bacon.

Storage

This dish reheats very well. It makes a great make-ahead breakfast. Reheat it in a covered pan over low heat until warm.

Ingredients

for the scramble:

  • 4 large eggs
  • 1.5 tablespoons heavy cream or milk
  • 1 1/2 teaspoons Old Bay seasoning or to taste
  • salt and pepper to taste
  • 1.5 tablespoons frying oil or clarified butter
  • 4 cups (600g) chopped cooked potatoes
  • 2 oz (60g) ham, chopped into cubes
  • 1 cup shredded cheese I used a mix of aged cheddar and Gruyere

to serve:

  • sour cream
  • chives

    Had my wisdom teeth pulled a few days and easing onto harder foods… This was delicious! I parboiled the potatoes so they’d be mushier but that’s just because I have to be careful chewing. 🙂
