Shredded carrot and apple salad with raisins, cinnamon, walnuts and coconut

Carrot and apple salad is something very traditional in my family, we ate it very often as a side for a dinner. We love of course the traditional version of the salad (it cosists of only 3 ingredients – apple, carrot and lemon juice), but sometimes I also make this version – I add to the basic recipe raisins, cinnamon, roasted walnuts, shredded coconut and coconut oil. All these ingredients go perfectly together, this salad is really delicious and full of flavour. The longer it rests the better it gets, this will soften the walnuts and shredded coconut texture, and all the ingredient will blend together. Give this salad a try, it’s really delicious, slightly sweet and sour, sour apple and lemon juice balance the sweetness of carrots and raisins and the addition of the coconut just rounds the flvours off nicely!

Slightly sweet and sour salad - sour apple and lemon juice balance the sweetness of carrots and raisins and the addition of the coconut just rounds the flvours off nicely!

Ingredients

  • 200 g / 7 oz carrots 2 large + 1 small
  • 1.5 tablespoons lemon juice
  • 2 tablespoons raisins
  • a large pinch of cinnamon preferably Ceylon cinnamon
  • 2 tablespoons walnuts lightly chopped and roasted on a dry pan
  • 1/2 green apple
  • 1 teaspoon coconut oil
  • 1 tablespoon shredded unsweetened coconut

Instructions

  • Wash the carrots and peel them. Wash the apple, you can leave the skin on.
  • Grate the carrot and apple on the small holes of the grater. Combine immediately with lemon juice.
  • Add the remaining ingredients and mix everything together. Serve immediately or better wait for about half an hour or longer (store the salad in the refridgerator) - after this time, the walnuts and coconut flakes will slightly soften, and the raisins will soak up the apple and carrot juice, the salad will taste better.
